About Us
We are a small home-based business. I began growing mushrooms in 2020. The flavors of fresh mushrooms is far and away better than anything that can be purchased at the grocery store. I quickly became hooked. I took classes, bought and read books, and studied online. In a couple of years, I had too many and started sharing with friends, family, and coworkers. This year I increased production in hopes that my hobby can pay for itself and brighten the kitchens of others in the area. I don't have a website, but I do maintain a Facebook page for Leslie's Gourmet Mushrooms. I occasionally post recipes and encourage you to follow me and send your recipes and pictures so that others can expand their kitchen skills with mushrooms!
My favorite way to cook mushrooms is simply sauteing them in olive oil with garlic until lightly browned and finishing them with sea salt and a dab of butter.

Practices
Our mushrooms are grown in humidity and climate-controlled grow tents located inside. No pesticides are used or needed. No chemical fertilizers are used. The grow tents have a steady supply of fresh air pulled from outside and exhaust fans that remove carbon dioxide. The process to grow mushrooms involves multiple steps. We use hardwood sawdust supplemented with soy hull pellets or wheat bran. When available, we use non-GMO soy hull pellets. We use feed grade grains that we sterilize to produce grain spawn from organic liquid culture mycelium. We pasteurize all substrate (sawdust and supplements) prior to adding grain spawn.
I have the capacity to produce much more than I am currently growing and will scale up production based on demand. Current varieties include various Oyster Mushrooms, Lion's Mane Mushrooms, Velvet Pioppino Mushrooms, Chestnut Mushrooms, and King Trumpet Mushrooms. On rare occasions, I also grow Maitake, Enoki, and other types. We have also begun production of Shiitake Mushrooms. Our mushrooms are grown in small batches, so the varieties vary week to week, with the most popular being available most often. It takes as little as 8 weeks, and as many as 20 weeks to produce a batch of mushrooms, depending on the variety.
